  • Step 1: Get the tomatoes:
    Ready by giving them a thorough wash and drying. Cut large tomatoes into quarters or halves, then arrange them on a large baking sheet. Add some sort of chopped onion and cloves of peeled garlic.   • Step 2: Season everything:

Which Tomatoes Work Well in Homemade Tomato Soup? 

Choose ripe, juicy, and naturally flavorful tomatoes for your homemade tomato soup. Roma tomatoes are a great option because they are meaty and contain comparatively little water, making the soup thicker. Vine-ripened tomatoes have an amazing balance of sweetness and acidity, which is another reason I like using them. You might need to roast your tomatoes a little longer to allow some of the moisture to evaporate if they are particularly big and juicy. You can also use cherry or grape tomatoes, which, when roasted, become exquisitely sweet. The most crucial factor is to use tomatoes that taste good before cooking, as roasting enhances the flavor.

Do Tomatoes Need to Be Peeled? 

For this recipe, the tomatoes do not need to be peeled. I used to believe that peeling was required for a perfectly smooth tomato soup, but after trying this recipe multiple times, I discovered that roasting and blending the tomatoes works just as well without that extra step. After roasting, the tomato skins become much softer, and a good blender can easily process them. You can run the blended soup thru a fine-mesh strainer if you want an incredibly smooth soup. But since I like the extra flavor from the roasted tomato skin and the simplicity of the process, I usually omit this.

Make Your Own Tomato Basil Soup

Depending on what you have at home, you can easily modify this soup. Add a little heavy cream or half-and-half near the end for a richer version. You can use unsweetened coconut milk for a slightly different flavor or just omit it if you’d rather have a soup without dairy. If you prefer a little heat, you can also add a pinch of red pepper flakes. The soup is made rich and savory with a small amount of grated Parmesan, and it is finished fresh with a drizzle of good olive oil. I occasionally add cooked pasta, white beans, or little homemade croutons for a more substantial meal. In order to preserve its vibrant flavor during extended cooking, fresh basil should be added close to the end.

How to Store Homemade Tomato Basil Soup

Freeze for up to three months to ensure optimal quality. If you are aware that the soup will be frozen, I suggest omitting the cream and reheating it. Reheat the soup slowly on the stove after thawing it in the fridge overnight. Before serving, adjust the seasoning and give it a nice stir.
